🌿 Homemade Pickled Ginger (Gut-Friendly Recipe)Ingredients • Fresh ginger, peeled & thinly sliced • 1 tsp salt (for brine salting step) • 1 cup rice vinegar • ½ cup water • 1½ tbsp raw honey⸻Instructions 1. Toss sliced ginger with salt and let sit for 10 minutes. 2. Drain liquid. Pour hot water over ginger and soak for 3 minutes. Drain again. 3. Make brine: In a small pot, combine 1 tsp salt, rice vinegar, and water. Bring to a boil, then pour the hot brine over the ginger in a clean glass jar.
